Hand picked harvest in crates, sorted afterwards in the cellar. The Carignan grape undergoes carbonic maceration : the grapes are placed in vast in their entirety and left intact during the vatting (20 days). The Grenache, Mourvèdre and Syrah are detemmed and traditionally made into wine – at 27-29° C. Terroir : Schist
